Our mozzarella is delivered by Bianca La Buffala twice weekly fresh from Naples and is chosen for its fresh, sweet flavour and soft, creamy texture. Used sparingly it brings a rich, smooth and slightly sharp finish to the pizza without overwhelming other flavours. 

Our friends at Neal's Yard Dairy also provide us with a selection of artisan cheeses, including Ogleshield, Spenwood, Ticklemore as well as our Parmesan. Neal's Yard Dairy is one of London's leading cheese retailers, working closely with small independent cheesemakers across Britain and Ireland.
